GINGER SOY CHICKEN STIR FRY
This Asian-inspired stir fry is bursting with flavour. Our ginger soy sauce adds a savoury zing to deliciously tender chicken, and when combined with rice and a medley of vegetables, makes a quick and easy weeknight dinner.
Ingredients:
2 boneless, skinless chicken thighs, diced
2 tbsp Asian Food Republic ginger soy sauce
2 tbsp vegetable oil
3 cloves garlic, minced
1 tsp ginger, grated
1 onion, sliced
1 head bok choy, sliced
1 bell pepper, sliced
1 carrot, sliced
1 cup broccoli florets
Salt and pepper to taste
3 cups cooked rice
Sesame seeds to garnish
Method:
In a bowl, add ginger soy sauce and diced chicken, toss to coat, and let marinate for 10-15 minutes
Heat the vegetable oil in a large pan or wok over medium-high heat, then add garlic and ginger and sauté for about 1 minute until fragrant
Add the marinated chicken to the pan and stir-fry for 5-6 minutes until cooked through and slightly browned, then remove the chicken and set aside
In the same pan, add the sliced onion, bell pepper, carrot, broccoli, and bok choy, and stir fry for about 3-4 minutes until the vegetables are crisp-tender
Season with salt and pepper to taste, then return the cooked chicken to the pan with the vegetables and stir to combine
Cook for an additional 1-2 minutes to heat everything through
Serve over a bed of cooked rice and garnish with sesame seeds
