GINGER SOY CHICKEN STIR FRY

This Asian-inspired stir fry is bursting with flavour. Our ginger soy sauce adds a savoury zing to deliciously tender chicken, and when combined with rice and a medley of vegetables, makes a quick and easy weeknight dinner.

Ingredients:

  • 2 boneless, skinless chicken thighs, diced

  • 2 tbsp Asian Food Republic ginger soy sauce

  • 2 tbsp vegetable oil

  • 3 cloves garlic, minced

  • 1 tsp ginger, grated

  • 1 onion, sliced

  • 1 head bok choy, sliced

  • 1 bell pepper, sliced

  • 1 carrot, sliced

  • 1 cup broccoli florets

  • Salt and pepper to taste

  • 3 cups cooked rice

  • Sesame seeds to garnish

Method:

  • In a bowl, add ginger soy sauce and diced chicken, toss to coat, and let marinate for 10-15 minutes

  • Heat the vegetable oil in a large pan or wok over medium-high heat, then add garlic and ginger and sauté for about 1 minute until fragrant

  • Add the marinated chicken to the pan and stir-fry for 5-6 minutes until cooked through and slightly browned, then remove the chicken and set aside

  • In the same pan, add the sliced onion, bell pepper, carrot, broccoli, and bok choy, and stir fry for about 3-4 minutes until the vegetables are crisp-tender

  • Season with salt and pepper to taste, then return the cooked chicken to the pan with the vegetables and stir to combine

  • Cook for an additional 1-2 minutes to heat everything through

  • Serve over a bed of cooked rice and garnish with sesame seeds
