GRILLED BEEF SKEWERS
These tasty skewers using our ginger soy sauce as a marinade combine succulent beef and charred vegetables for a zingy and flavourful dish. Paired deliciously with rice, cous cous, or a fresh salad.
Ingredients:
700g beef sirloin, cut into 2.5cm cubes
1 red bell pepper, cut into chunks
1 green bell pepper, cut into chunks
1 red onion, cut into chunks
8-10 cherry tomatoes
1/4 cup ginger soy sauce
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Wooden or metal skewers
Method:
If using wooden skewers, soak them in water for about 30 minutes to prevent burning during cooking
In a bowl, combine the ginger soy sauce, olive oil, balsamic vinegar, minced garlic, and spices, and mix well to create the marinade
In a shallow dish add the beef cubes and pour half of the marinade over, then toss to coat evenly
Cover and refrigerate for at least 1 hour (or up to overnight) to let the flavours develop
Preheat your grill or grill pan over medium-high heat
Thread the marinated beef cubes onto the skewers, alternating with chunks of bell peppers, onion, and cherry tomatoes
Place the skewers on the preheated grill and cook for about 8-10 minutes, turning occasionally, until the beef is cooked to your desired level of doneness and the vegetables are charred and tender
Brush the remaining marinade over the skewers during the last few minutes of grilling for extra flavour
Once cooked, remove the beef and vegetable skewers from the grill and let them rest for a few minutes before serving
