GRILLED BEEF SKEWERS

These tasty skewers using our ginger soy sauce as a marinade combine succulent beef and charred vegetables for a zingy and flavourful dish. Paired deliciously with rice, cous cous, or a fresh salad.

Ingredients:

  • 700g beef sirloin, cut into 2.5cm cubes

  • 1 red bell pepper, cut into chunks

  • 1 green bell pepper, cut into chunks

  • 1 red onion, cut into chunks

  • 8-10 cherry tomatoes

  • 1/4 cup ginger soy sauce

  • 2 tablespoons olive oil

  • 2 tablespoons balsamic vinegar

  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon ground black pepper

  • Wooden or metal skewers

Method:

  • If using wooden skewers, soak them in water for about 30 minutes to prevent burning during cooking

  • In a bowl, combine the ginger soy sauce, olive oil, balsamic vinegar, minced garlic, and spices, and mix well to create the marinade

  • In a shallow dish add the beef cubes and pour half of the marinade over, then toss to coat evenly

  • Cover and refrigerate for at least 1 hour (or up to overnight) to let the flavours develop

  • Preheat your grill or grill pan over medium-high heat

  • Thread the marinated beef cubes onto the skewers, alternating with chunks of bell peppers, onion, and cherry tomatoes

  • Place the skewers on the preheated grill and cook for about 8-10 minutes, turning occasionally, until the beef is cooked to your desired level of doneness and the vegetables are charred and tender

  • Brush the remaining marinade over the skewers during the last few minutes of grilling for extra flavour

  • Once cooked, remove the beef and vegetable skewers from the grill and let them rest for a few minutes before serving
