KATSU CURRY NOODLE BROTH

A quick and comforting Katsu Curry noodle broth with rich umami flavour and a smooth, warming finish. Perfect as a complete noodle soup, it pairs beautifully with your choice of protein, fresh greens, and noodles for an easy, satisfying meal. The savoury broth is both hearty and balanced, making it ideal for cosy lunches or simple weeknight dinners.

Ingredients:

4 Tbsp AFR Katsu Curry Noodle Sauce

1 cup (250ml) boiling water

1 portion noodles (80–100g dried or 150g fresh)

100–150g chicken, cut into bite sized pieces (or swap out for tofu)

1 cup vegetables (e.g. bok choy, spinach, broccoli, carrot)

Chilli flakes

Optional:

Soft-boiled egg

Chilli oil

Method:

Cook noodles according to packet instructions. Add vegetables in the last 1–2 minutes. Drain. Cook chicken in a pan over medium-high heat until cooked through. Combine Katsu Curry sauce and boiling water in a bowl and stir until smooth.

Add noodles and vegetables, top with chilli flakes, chicken and serve hot.

Notes:

  • For a soft-boiled egg: in boiling water simmer for 6–7 minutes, then cool in cold water.

  • Chicken can be substituted for protein of your choice (e.g. beef, pork).
