CREAMY CURRY UDON NOODLES

A rich and comforting bowl of creamy curry udon, made by blending our katsu curry noodle sauce with silky cream cheese for a smooth, velvety finish. Tossed through thick udon noodles, it’s a cosy, flavour-packed dish that comes together in minutes.

Serves 1-2

Ingredients:

4 Tbsp AFR Katsu Curry Noodle Sauce

1 Tbsp cream cheese

1 Tbsp water

1 portion udon noodles 

1 Tbsp oil

Furikake*

Spring onion (sliced)

Optional

Spinach or bok choy (thinly sliced)

Method:

Cook udon noodles in boiling water for 3–5 minutes (or according to the packet), drain and set aside. Heat cream cheese, water and katsu curry noodle sauce in a pot (or in the microwave), and stir to combine. Add cooked udon noodles, and stir through well to combine.

Garnish with furikake and spring onion.

Optional:

Add vegetables to the cooking noodles for the last 1-2 minutes and drain.

Stir through spinach or thinly sliced bok choy (or any vegetables of your choice).

Notes:

  • *Furikake is a savory, dry Japanese condiment designed to be sprinkled on steamed rice, noodles, or fish.

  • Add a protein of your choice to bulk up the dish. (e.g. chicken, pork, beef or tofu)

  • Add more water if needed to thin the sauce.

  • The recipe can be easily doubled to serve more.
